Flavor profile

The makrut lime leaf has a distinctive double-lobed shape (two leaves joined end to end) and an intensely aromatic, floral-citrus oil profile dominated by citronellal, linalool, and nerol that is unlike any other citrus leaf. The whole leaf is added to Thai curries, coconut soups (tom kha, tom yum), and rice dishes to infuse flavor while cooking — the leaf itself is typically not eaten (the central rib is tough). Finely chiffonade-cut leaves can be eaten in preparations like larb and certain Thai salads. The rind of the fruit is intensely flavored and used grated in curry pastes (green, red, and massaman all use makrut lime rind); the juice is minimal and intensely sour, used in small quantities. The leaf is available fresh from Asian grocery stores and freezes excellently — sealed in a freezer bag, frozen leaves are nearly indistinguishable from fresh when used in cooked applications. Dried leaves have almost none of the fresh leaf's aromatic complexity and are not a functional substitute.
